The Dutch experience in Beirut
InterContinental Phoenicia Beirut’s Mosaic restaurant transformed itself into a Dutch Province showing off the Dutch folklore, traditions, costumes and most importantly the exquisite cuisine.
Lebanese celebrated the Dutch culture through the hotel’s own Hollander Executive Chef Edwin Kats who took charge over Mosaic’s kitchen and revealed all those secret recipes that would turn the simplest honest-to-goodness comfort dish into an unforgettable gastronomic experience.
The most enticing flavors of Holland were concocted to greet the guests into the realm of true Dutch culture. “Haring” is one of the specialties that would immediately seize your attention as it was eaten upside down. To eat “Haring” like a Dutch, the head should be laid back and the fish dangled into the mouth; that way you really have a view of what you’re eating!
Probably the most unforgettable piece of show was the “Shoe Making” fair. Those wooden clogs called “Klompen” were invented 750 years ago to protect peasants’ feet from the rigid nature of Holland’s soil. “Dutch people still wear them today,” claimed the Shoe Maker. “They are the best cure against feet and back pain.” And in Lebanon, it was being made in front of your eyes! Well, not yours but the ones who were there enjoying others’ cultures!
